Ermine Frosting-aka Boiled Frosting
Sometimes I make a cake and don’t take pictures. Fortunately a nice fellow, Kevin, snapped a pic. Sadly, this is the only one and I’m using it for all 4 recipes I developed for this one cake. I might have to recreate the cake in it’s entirety just for a photo shoot.
Ermine Frosting
57g flour
355ml whole milk
340g butter
300g granulated sugar
Pinch of salt
2 teaspoons vanilla
In a small saucepan heat the milk and flour, whisking continuously until a thick, smooth paste forms.
Cover with plastic wrap and cool.
In the bowl of a stand mixer combine the butter and sugar. Whip until smooth. Add the vanilla and salt. Add the paste to the butter in 3 additions.
Whip for 3 full minutes.
Makes just enough for 3 8-inch layers.
