Yellow Cake-Adrian Cried
This is a very good tasting cake. My Godfather Adrian literally shed a tear and said it tastes like his mother’s cake. He’s a sold 75+ years old.
2.25cup/260g cake flour
2 teaspoon baking powder
0.25 teaspoon baking soda
0.50 teaspoon salt
1 cup/230g unsalted butter
4 eggs, separated
1.75 cup/350g granulated sugar
2 teaspoons vanilla
1 cup/240ml buttermilk
pinch of cream of tartar
Chocolate Buttercream
1.25 cup/290g butter
3-4 cup/ 360-480g powdered sugar
3/4 cup/65g cocoa power
splash of half and half
vanilla
pinch of cream of tartar
Sift the flower, baking powder, baking soda and salt together. Cream the butter and sugar. Add yolks. Mix in half the flour-blend, half the buttermilk-blend, remaining flour, remaining buttermilk. Add vanilla. Whip the egg whites in the separate bowl with a little cream of tartar. Fold whites into batter.
325 degree oven. Prepare 2 8-inch pans or 3 6-inch pans. Bake 30-40 minutes until the tester comes out clean.
