Thai Marinade for Chicken
This works for grilled chicken that’s skinless and boneless or for thighs or drums with skin and bones.
Marinate for up to 24 hour but minimally 4 hours.
24 chicken thighs
1 teaspoon kosher salt
2 tablespoons oil
6 cloves garlic, about 1 ½ tablespoons chopped
2 tablespoons fresh ginger, minced
3 tablespoons fish sauce
¼ cup thai sweet chili sauce
2 tablespoons tamarind paste
3 green onions, sliced thinly
2 tablespoons fresh cilantro, chopped
1/4 cup of water to thin if needed
I serve this on a bun or with rice. It’s a nice sweet and salty and spicy (mildly) blend.
