German Potato Salad
The family had a conversation about potato salad and the quest to recreate what we used to have as youngsters. I actually didn't like my step-mother's potato salad but other people did or said that they did. However, I currently like potato salad so I thought let me see what the internet says about this German stuff and try to pull one together. I'll will do it again but probably sans bacon.
4 pounds red skinned potatoes
8-10 ounces bacon, diced and cooked, save the grease
1 small onion
2 tablespoons sugar
1 tablespoon dijon mustard
1 teaspoon celery seed
1/2 teaspoon black pepper
1/4 cup vinegar
1/4 cup oil
salt to taste
1/4 cup, parsley, fresh chopped.
Boil the potatoes in salted water. Peel when cool enough to handle. Render the bacon. Leave it in the skillet, adding the diced onion. Cook until soft. Add the rest of the dressing into the onion bacon mixture and cook until the sugar is dissolved, don't boil it. Pour over the potatoes, toss in parsley and mix until coated. Cool and serve.
