Pierogi

Alas there are no pictures, but you know doing my thing, this is my recipe repository. 

Friends got together on a cooler then expected Tuesday night to make dozens and dozens of pierogi. We talked about grandmothers and women's rights. We delighted in each other company. My house is small and the kitchen is smaller, somehow we managed. 

The recipe

3 cups all purpose flour

2 teaspoons oil

1 teaspoon salt

1 egg

1 cup hot tap water

Dump it all in a stand mixer and mix a few minutes until it makes a soft shaggy dough. On a floured counter top knead it a few times to bring it together. Rest the dough covered if you have time, otherwise, roll it out. Using 2 inch cutter make circles. Fill with your choice of filling (We had vegan potatoes with caramelized onions, salt, white pepper and nutmeg). Pinch closed, you don't need water, and it's better not to use water. Use a fork to assure the dumpling is sealed. Set on floured sheet and don't touch other pierogi. 

To cook boil in salted water until the rise to the top of the pot, then sautee in a skillet with some reserved caramelized onions. Serve with sour cream and applesauce.
