Half Yellow Sheet Cake

Five years of Book Club! A cake to celebrate.

I made this beauty at the peak of summer. All the fruit and whipped cream made for a light but celebratory dessert.

Half a Sheet Cake

The recipe is for a Half Sheet cake 12x18 x 2"

600g all-purpose flour

60g Corn starch

2 tablespoons and 2 teaspoon baking powder

1 teaspoon salt

480g milk, room temperature

456g butter, room temperature

800g granulated sugar

6 eggs

4 teaspoon vanilla

Sift dry ingredients together. Set aside.

In a stand mixer, beat butter and sugar until light.

Add eggs one at a time.

Add dry ingredients slowly. It should be like small crumbs when combined.

Add milk and vanilla until the batter is silky smooth

Grease a 12 x 18 sheet pan then dust with flour

Pour batter into pan evenly tap bottom of cake pan

Bake at 325 45-50 minutes check with a cake tester or toothpick

Place on the cooling rack.

Serves 48 pieces.

Decorated cookies in the shape of letters and numbers was all the rage a few years ago. While I liked the look, I thought cake would fair better. I liked it. :)

Certainly making macarons and meringues cause much. more. work. but you can buy them too to ease the burden on the day of assembly.
