Pate Choux

I’ve seen them with milk and with water only. I’m a water only kind of gal.

Preheat oven 400 degrees

8 T butter

1 cup water

3/4 teaspoon salt

1 cup flour

4 or 5 eggs

Melt butter, water and salt together. Add the flour. Stir in the pot with the heat on for a few minutes to dry out the dough. Put into the bowl of a stand mixer. Beat with a paddle a few minutes. Add the eggs one at a time until it comes together.

Wet a cookie sheet, parchment line the sheet, draw lines to indicate the length of piping. Turn the parchment over so the wet side is up. Pipe the eclairs. Bake 25 minutes, reduce heat to 300 bake 10 minutes more. Poke with holes into the eclairs. Leave them in the oven to dry out for 30 minutes or longer.
